Viper King is probably one of the worst things you will encounter in XCOM 2 Alien Hunters DLC. Just as Berserker Queen, he has a large HP pool and other attacks including an AOE freeze blast, an escape portal, and choke ability that dishes out huge amount of damage and can unconscious targets.

XCOM 2 Alien Hunters Viper King Guide
In order to beat him, you need at least 2 squad members on Overwatch and try to lure him in order to land a couple of shots.
Since choke ability can completely separate one squad member, you should try and interrupt the ability by shooting Viper King or try to heal the affected ones. He rarely cares about cover which is why it is not too hard to get him out in the open using a few rookies and deal some damage using Sharpshooters.
Another thing that you need to bear in mind is his high dodge rate which is why grenades are your best bet. In addition to not caring about cover, he rarely gives any attention to things like vehicle, giving you opportunity to deal additional damage.
Since this guy cannot be poisoned by any means, do not try to use Gas Grenades. Another reason why you shouldn’t do it is because he will force your units to pass through the fog and use these grenades against your units.
Last thing that you need to bear in mind is to make sure that you complete the job after you see him summon his escape portal unless you are on a turn-limit. All in all, you need to get on your toes and get as aggressive as possible once you see him summon an escape portal!
