As the Achievement explicitly states, the last hit to touch the boss and score a KO must be an EX Special. Since it is hard to gauge how much HP a boss is left with, I recommend that you continue hitting the boss and trigger the Final Phase. During the Final Phase, you need to make sure that you have as much Meter as possible but not full.

The reason for this is that a full Meter will trigger the Super Art. During the Final Phase, shoot the boss a little to bring him to a weakened state and start spamming EX Special(s) to score a KO. Surprisingly, out of all the bosses in Cuphead, the final boss is arguably the best one to unlock the Ceramic Strike Achievement.

This is due to the fact that the final boss’s Final Phase is incredibly short. Alternatively, you can also do so before finishing a Mausoleum that should prevent you from triggering a Super Art accidentally. With these tips, I am hopeful that you will easily be able to unlock Cuphead Ceramic Strike Achievement on both PC and Xbox One.
