In Legend Of Zelda: Breath Of The Wild dragons are usually encountered during sunrise. Also, interacting with them will complete some Shrine Quests but beware as the dragons have an affinity to certain elements.
Also, the items you will get after defeating the dragon will depend upon the body part of the dragon you hit. The items will fall on the ground shrouded with a glowing energy. Dragon parts are useful to earn money as you can sell them for a high price. However, mixing them with other food will increase the duration of special effect.
